Vegan Dijon Caesar Dressing – Oh She Glows

As many of you likely know, I LOVE Angela Liddon, so you’ll see a lot of her on here, but this Caesar dressing is definitely worth sharing first. The sauce is perfect for serving on a classic Caesar salad, but also great for dipping pretty much anything from veggies, to sandwiches, to my personal favorite, pizza crusts.

Ingredients

  • 2/3 cup vegan mayonnaise
  • 2 cloves garlic, minced
  • 2 teaspoons Dijon mustard
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon white wine vinegar
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon sea salt or more, to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tsp of peppercorn brine – optional – (my mom’s own addition and it’s so good!)

Whisk ingredients together and serve! Stores for about a week in the fridge.
